Chocolate Cream Cheese

After the boring pistachio and the blackberry fail, I needed to make a really good cake. I was beginning to get a little down on my bundt baking skills. I figured I couldn't go wrong with chocolate and cream cheese!

The recipe said to pour the chocolate batter in the bundt pan first and then spoon the cream cheese mixture on top and it would sink to the bottom. I was able to pour the cream cheese mixture and it didn't sink. I started to worry I was going to have another failure on my hands! The cream cheese did finally sink a little while it was baking.

To my relief, this cake was yummy! I took it to work and everyone tried it (the same cannot be said for the two previous cakes). A couple of the guys (my husband included) thought it would be good with a frosting of some kind, but I don't think it needs any.

Overall, everyone seemed to really enjoy this cake. When I make this cake again I will pour the chocolate and cream cheese in layers to distribute the cream cheese throughout the cake.

Rating: 4.5 ("It would be a 5 with frosting.")

Pistachio




I would like to post at least once a week. It has been really busy around here, I've found the time to make the cakes, but I haven't had the time to update the blog. I made this cake two weeks ago. I was short on time so I needed something easy. This was made with a yellow cake mix and pistachio pudding mix...very quick and easy. I added green food coloring because I wanted it to be really green. I should of added more, it still wasn't as green enough!

This cake tasted boring. It was very moist, but I thought it lacked any flavor. Some "tasters" really liked it. It was finished off Saturday night by some friends who named it "The Drunk Bundt". Apparently, after a few drinks, this cake is amazing!

It recieved an average rating of 3.

Apple Spice


I made this cake Sunday afternoon. It has Granny Smith Apples in it and homemade caramel sauce for topping. The recipe said to bake for 75-90 minutes. I baked it for 75 and it was a little dry. If I make this one again, I won't bake it as long.

It was really good served warm with vanilla ice cream.

We decided we need a rating system for the cakes. On a scale of 1-5, 5 being the best, this cake received a 3.5! If you live nearby and you're interested in being on the "Bundt Panel" for the next cake, let me know!


Old Virginia Blackberry Cake

I found blackberries on sale and decided to find a recipe for them. I found two. I was missing a few ingredients for one so I tried the Old Virginia Blackberry Cake. It has cinnamon, nutmeg, and clove in it. I thought this sounded strange with blackberries, but I made it anyway. It was not good. In fact, I would say it's the worst cake I've ever had. I took it to work and everyone ate it. They all agreed it was "different", but they ate it! My Mom and Step dad liked it too. I still think it was gross. I will not be making this cake again.

I also need to work on my frosting techniques....this one is not very pretty! Overall, this cake was a fail!
